Beef and Rice Casserole

1 lb ground beef

1 cup uncooked white rice

1 can (10.5 oz) condensed cream of mushroom soup

1 can (14.5 oz) diced tomatoes (with juice)

1 medium onion, diced

2 cloves garlic, minced

1 cup beef broth

1 cup shredded cheddar cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat, if necessary.

      Add diced onions and minced garlic to the skillet. Cook until onions are translucent, about 3-4 minutes.

        Stir in the uncooked rice, cream of mushroom soup, diced tomatoes (with juice), beef broth, Italian seasoning, garlic powder, paprika, salt, and pepper. Combine well.

          Transfer the mixture into a greased 9x13 inch casserole dish. Spread it evenly.

            Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

              After 30 minutes, remove the foil and sprinkle shredded cheddar cheese on top. Return to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Serve warm, and enjoy this comforting dish!
