1 lb beef sirloin, thinly sliced against the grain

8 oz egg noodles

1 tbsp vegetable oil

3 cloves garlic, minced

1 small onion, thinly sliced

1 cup bell peppers, sliced (any color)

1 cup snap peas, trimmed

1/4 cup soy sauce

2 tbsp oyster sauce

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

1 tsp ginger, minced

1/2 tsp black pepper

1/4 cup green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Cook the Noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain them and set aside, drizzling a little oil to prevent sticking.

    Prepare the Beef: In a medium bowl, toss the sliced beef with 1 tablespoon of soy sauce and black pepper. Let it marinate for about 10 minutes.

      Sauté the Vegetables: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant. Then, add the onion and bell peppers, stir-frying them until they begin to soften, about 3 minutes. Toss in the snap peas and cook for an additional 2 minutes.

        Cook the Beef: Push the vegetables to one side of the skillet. Increase the heat to high and add the marinated beef to the center. Sear the beef for 2-3 minutes without stirring, then stir everything together and cook for another 2-3 minutes until the beef is browned and cooked through.

          Make the Sauce: Reduce the heat to medium and pour in the remaining soy sauce and oyster sauce, stirring to combine. Add the cornstarch slurry and mix well until the sauce thickens, about 1 minute.

            Combine: Add the cooked egg noodles to the skillet, tossing everything together to coat the noodles in the sauce. Continue to cook for another 2 minutes, ensuring everything is well combined and heated through.
