Ingredients

1 lb boneless, skinless chicken breasts, diced into 1-inch cubes

1 cup fresh pineapple chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into 1-inch pieces

1/2 cup BBQ sauce (store-bought or homemade)

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Skewers (wooden or metal)

Instructions

Marinate the Chicken: In a bowl, combine the BBQ sauce, honey, soy sauce, smoked paprika, garlic powder, salt, and pepper. Add the diced chicken and toss until well coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

Assemble Skewers: Thread the marinated chicken, pineapple chunks, red bell pepper, green bell pepper, and red onion onto the skewers, alternating between the ingredients.

Preheat Grill: Preheat your outdoor grill or indoor grilling pan over medium-high heat.

Grill Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F. The veggies should be slightly charred and tender.

Serve: Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Drizzle additional BBQ sauce on top if desired, and serve warm with your choice of side dishes like coconut rice or a fresh salad.
