BBQ Chicken Sweet Potato Bowls

2 large sweet potatoes, peeled and cubed

1 pound boneless, skinless chicken breast

1 cup BBQ sauce (your favorite brand or homemade)

1 teaspoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 cup corn, fresh or canned

1 bell pepper, diced (any color)

1 avocado, sliced

1/4 cup chopped fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Sweet Potatoes: Toss the cubed sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them on a baking sheet in a single layer and roast for about 25-30 minutes, or until they're fork-tender and slightly caramelized, stirring halfway through.

      Prepare the Chicken: While the sweet potatoes are roasting, heat a skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides. Add them to the skillet and cook for about 6-7 minutes on each side, or until the chicken is golden and cooked through.

        BBQ the Chicken: Pour the BBQ sauce over the cooked chicken, reducing the heat to low. Let it simmer for about 5 minutes, turning the chicken to coat it evenly in the sauce. Once nicely glazed, remove from heat and let it rest for a few minutes before slicing or shredding.
