1 pound salmon fillet, skin removed and cut into bite-sized cubes

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 large egg, beaten

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 tablespoon lime juice

Fresh cilantro, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Breading Station: In a shallow dish, combine the flour, salt, pepper, and smoked paprika. In another dish, place the beaten egg. In a third dish, spread the panko breadcrumbs.

      Coat the Salmon: Dredge each salmon cube in the flour mixture, shaking off the excess. Dip into the beaten egg, then coat with panko breadcrumbs, pressing gently to adhere.

        Bake the Bites: Place the coated salmon bites onto the prepared baking sheet. Bake for 12-15 minutes or until golden and cooked through, flipping halfway through to ensure even crispiness.

          Prepare the Bang Bang Sauce: In a bowl, combine mayonnaise, sweet chili sauce, Sriracha, and lime juice, mixing until smooth. Adjust the spice level if desired.

            Serve: Once the salmon bites are golden, remove them from the oven. Drizzle with the Bang Bang sauce or serve it on the side for dipping. Garnish with fresh cilantro.
