1 lb (450g) boneless, skinless chicken breasts

Salt and pepper, to taste

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

Oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tablespoons sriracha sauce (adjust for spice level)

1 teaspoon honey

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon green onion, finely chopped (for garnish)

Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. Season with salt and pepper.

    Set Up Breading Station: In three separate bowls, place flour in the first bowl, beaten eggs in the second, and panko breadcrumbs in the third.

      Coat the Chicken: Dredge each piece of chicken first in flour, shaking off excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken pieces with panko breadcrumbs, pressing gently to adhere.

        Heat the Oil: In a large skillet, heat about 1 inch of oil over medium-high heat. Once the oil is hot (around 350°F or 175°C), carefully add the breaded chicken in batches, ensuring not to overcrowd the pan. Fry until golden brown, about 4-5 minutes per side.

          Make the Bang Bang Sauce: While the chicken is frying, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and garlic powder in a bowl until well combined.

            Drain the Chicken: Once the chicken is cooked, transfer it to a plate lined with paper towels to drain excess oil.

              Combine and Serve: In a large mixing bowl, toss the fried chicken pieces with the Bang Bang sauce until well-coated. Transfer to a serving platter.
