Bananas are often celebrated as a superfood, and for good reason. They are packed with essential nutrients, making them an excellent choice for a healthy dessert. One of the standout features of bananas is their impressive potassium content. Potassium is a vital mineral that helps regulate fluid balance, muscle contractions, and nerve signals. Including potassium-rich foods like bananas in your diet can help reduce the risk of hypertension and support heart health.

Ingredients

2 ripe bananas, mashed

1 cup Greek yogurt (vanilla-flavored for added sweetness)

1 scoop vanilla protein powder

2 tablespoons almond butter (or any nut butter of your choice)

1 tablespoon honey or maple syrup (adjust sweetness to taste)

½ teaspoon ground cinnamon

1 teaspoon vanilla extract

¼ cup rolled oats

1 tablespoon coconut oil

2 tablespoons dark chocolate chips (for topping)

Fresh banana slices (for garnish)

Chopped nuts (walnuts or pecans, for garnish)

Instructions

Prepare the Base: In a mixing bowl, combine the mashed bananas, Greek yogurt, protein powder, almond butter, honey/maple syrup, ground cinnamon, and vanilla extract. Mix until you have a smooth, creamy mixture.

Incorporate Oats: Gently stir the rolled oats into the banana mixture until evenly distributed. The oats will add texture and extra sustenance.

Chill the Pudding: Transfer the banana mixture into serving cups or bowls. Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the pudding to thicken.

Prepare Banana Topping: In a small saucepan, heat the coconut oil over medium heat. Add slices of banana and cook for about 2-3 minutes on each side, until they are caramelized and golden brown.

Assemble the Pudding: Once the pudding has chilled, remove from the refrigerator. Top each pudding with the caramelized banana slices, sprinkle with dark chocolate chips, and add some chopped nuts for an extra crunch.

Serve: Enjoy it immediately as a protein-packed dessert or snack! You can also keep it in the fridge for later, but best served fresh for optimal flavor and texture.
