2 medium zucchinis, sliced into 1/4-inch thick rounds

2 boneless, skinless chicken breasts

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

1 cup breadcrumbs (preferably whole wheat or panko)

1 tsp dried oregano

1 tsp dried basil

1/2 tsp garlic powder

Salt and pepper to taste

Olive oil spray

Preheat the oven to 400°F (200°C).

    Prepare the chicken: Place the chicken breasts between two pieces of plastic wrap. Use a meat mallet or rolling pin to pound them to an even thickness of about 1/2 inch. This ensures even cooking. Season both sides with salt, pepper, oregano, basil, and garlic powder.

      Set up the breading station: In a shallow bowl, beat the egg. In another shallow dish, combine the breadcrumbs with a pinch of salt and pepper.

        Bread the chicken: Dip each chicken breast into the beaten egg, allowing any excess to drip off. Then coat in the breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere.

          Bake the chicken: Spray a baking sheet with olive oil spray. Place the breaded chicken breasts on the sheet and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C). Flip halfway through for even browning.

            Prepare the zucchini: While the chicken is baking, place the sliced zucchini on another baking sheet. Lightly spray with olive oil, then sprinkle with salt and pepper. Toss to coat evenly. Bake in the oven with the chicken for about 10 minutes, until just tender but still firm.

              Assemble the dish: Remove the chicken from the oven. Spread a layer of marinara sauce over each piece, then sprinkle with mozzarella and Parmesan cheese.

                Final bake: Return the baking sheet with the chicken to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
