Ingredients

2 large sweet potatoes

2 tablespoons cornstarch

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon smoked paprika (optional for a smoky flavor)

½ teaspoon black pepper

½ teaspoon salt

¼ teaspoon cayenne pepper (optional for heat)

2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature is crucial for achieving that crispy texture.

Prepare Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into even sticks, about 1/4 inch thick for optimal crispness.

Soak Them: Soak the sweet potato sticks in cold water for about 30 minutes to an hour. This helps to remove excess starch, which can prevent them from getting crispy.

Drain and Dry: After soaking, drain the sweet potatoes and pat them dry with a clean kitchen towel or paper towels to remove as much moisture as possible.

Coat the Fries: In a large bowl, combine the dry sweet potato sticks with cornstarch, garlic powder, paprika, smoked paprika, black pepper, salt, and cayenne pepper. Toss until the sweet potatoes are evenly coated.

Add Olive Oil: Drizzle the olive oil over the coated fries and toss again to ensure they are evenly coated. This helps achieve that golden-brown crunch.

Arrange on Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the fries out in a single layer without overcrowding. Use two baking sheets if necessary.

Bake: Bake in the preheated oven for 25-30 minutes, flipping them halfway through to ensure even cooking. For extra crispness, you can turn on the broiler for the last 2-3 minutes, but watch closely to prevent burning.

Garnish & Serve: Once crispy and golden, remove them from the oven. Optionally, sprinkle with fresh parsley for a pop of color. Serve immediately with your favorite dipping sauce!
