Ingredients

4 boneless salmon fillets (about 6 oz each)

1/4 cup olive oil

2 lemons (one for juice and zest, one for slices)

3 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

1 teaspoon fresh thyme leaves (or 1/3 teaspoon dried thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Marinade: In a small bowl, combine the olive oil, lemon juice, and lemon zest. Add the minced garlic, dill, parsley, thyme, salt, black pepper, and red pepper flakes if using. Whisk the mixture until well combined.

Marinate the Salmon: Place the salmon fillets on the prepared baking sheet, skin-side down. Drizzle half of the marinade over the fillets, ensuring they are well coated. Let them marinate for about 15-20 minutes at room temperature, which will enhance the flavor.

Add Lemon Slices: After marinating, lay thin slices of lemon over the top of each salmon fillet. This will not only add flavor but also a beautiful presentation.

Bake the Salmon: Pour the remaining marinade over the fillets. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time may vary based on the thickness of the fillets; use an instant-read thermometer to check for an internal temperature of 145°F (63°C).

Garnish and Serve: Once baked, remove the salmon from the oven and let it rest for a couple of minutes. Garnish with a sprinkle of extra fresh herbs if desired, and serve with your favorite sides, such as roasted vegetables or a fresh salad.
