Ingredients

4 bone-in, skin-on chicken thighs

1/2 cup unsalted butter, melted

6 garlic cloves, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried)

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 lemon, juiced and zested

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Garlic Butter Mix: In a medium bowl, combine the melted butter, minced garlic, rosemary, thyme, paprika, salt, black pepper, lemon juice, and lemon zest. Whisk until well combined.

Prepare the Chicken: Pat the chicken thighs dry with a paper towel to ensure crispy skin. Place them in a large baking dish or oven-safe skillet, skin side up.

Coat the Chicken: Pour the garlic butter mixture over the chicken thighs, ensuring they are thoroughly coated. Use a brush or your hands to evenly distribute the mixture over the skin and under the thighs where possible.

Bake the Chicken: Bake in the preheated oven for 30 to 35 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the skin is golden and crispy. Baste the chicken with the pan juices halfway through cooking for extra flavor.

Broil (Optional): If desired, for extra crispy skin, broil the chicken on high for an additional 2-3 minutes, watching closely to prevent burning.

Garnish and Serve: Remove from the oven, let it rest for 5 minutes, and then garnish with fresh parsley before serving. Pair it with roasted vegetables or a fresh salad to complete your meal.
