4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup sun-dried tomatoes, chopped

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Juice of 1 lemon

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a medium bowl, combine the chopped spinach, feta cheese, sun-dried tomatoes, minced garlic, red pepper flakes, oregano, salt, and black pepper. Mix well until all ingredients are evenly combined.

      Prepare the Chicken Breasts: Place each chicken breast between two pieces of plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness, about 1/2 inch thick. Carefully season both sides with salt and pepper.

        Stuff the Chicken: Take a generous portion of the filling and place it in the center of each chicken breast. Carefully roll the chicken breast over the filling, folding it in, and secure with toothpicks or kitchen twine to hold the stuffing in.

          Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.

            Bake: Once the chicken is seared, drizzle with lemon juice and transfer the skillet to the preheated oven. Bake for approximately 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F/75°C).

              Serve: Carefully remove the toothpicks or twine from the chicken. Let the chicken rest for 5 minutes before slicing. Garnish with fresh basil leaves if desired. Serve warm with a side of roasted vegetables or a fresh salad.
