Ingredients

1 cup cottage cheese (low-fat or regular)

4 large eggs

1/2 cup shredded cheddar cheese (or cheese of your choice)

1/4 cup finely chopped green onions

1/4 cup diced bell peppers (red, yellow, or green)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh parsley or chives for garnish (optional)

Olive oil or butter for greasing the baking dish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare Baking Dish: Lightly grease an 8x8 inch baking dish with olive oil or butter to prevent sticking.

Mix Ingredients: In a large mixing bowl, combine the cottage cheese, eggs, shredded cheddar cheese, chopped green onions, diced bell peppers, garlic powder, onion powder, salt, and pepper. Whisk together until the mixture is well blended.

Pour Into Baking Dish: Pour the egg mixture into the prepared baking dish, spreading it out evenly.

Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the edges are golden and the center is set. You can check for doneness by inserting a toothpick in the center; it should come out clean.

Cool and Serve: Once baked, remove it from the oven and let it cool for a few minutes. Slice into squares and serve warm. Garnish with fresh parsley or chives if desired.
