Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/4 cup all-purpose flour

Cooking spray or olive oil for drizzling

Optional: fresh parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Breading Station:

      - In a bowl, whisk the eggs until beaten.

        - In a separate bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, dried oregano, dried thyme, smoked paprika, salt, and black pepper. Mix well.

          Coat the Chicken:

            - Place the flour in a shallow dish. Dredge each piece of chicken in the flour, shaking off excess.

              - Dip the floured chicken into the beaten eggs, ensuring it is well coated.

                - Roll the chicken in the breadcrumb mixture, pressing gently to ensure the coating sticks. Arrange the coated nuggets on the prepared baking sheet.

                  Bake the Nuggets:

                    - Lightly spray the nuggets with cooking spray or drizzle with a bit of olive oil for extra crispiness.

                      - Bake in the preheated oven for 15-20 minutes, or until the nuggets are golden brown and cooked through, flipping halfway through for even cooking.

Serve: Remove from the oven and let cool for a few minutes. If desired, garnish with fresh parsley. Serve hot alongside your favorite dipping sauces.
