Ingredients

1 large wheel of Brie cheese (about 8 ounces)

1/2 cup pecans, chopped

1/4 cup honey (plus extra for drizzling)

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 teaspoon black pepper

1 sheet of puff pastry (thawed if frozen)

1 egg (beaten, for egg wash)

Fresh apples, baguette slices, or crackers (for serving)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare the Pecans: In a small mixing bowl, combine the chopped pecans, honey, rosemary, vanilla extract, salt, and black pepper. Stir until the pecans are well coated in the honey mixture.

Prepare the Brie: If your Brie has a thicker rind, you can slice off the top rind to allow the flavors to ooze out better during baking (optional).

Wrap the Brie: On a lightly floured surface, roll out the puff pastry into a large circle that can wrap around the Brie. Place the Brie in the center of the pastry.

Add the Topping: Spoon the pecan and honey mixture over the top of the Brie.

Seal the Pastry: Fold the pastry over the Brie, pinching the edges to seal completely. Trim any excess pastry as needed.

Egg Wash: Place the wrapped Brie on a baking sheet lined with parchment paper. Brush the pastry with the beaten egg for a beautiful golden color during baking.

Bake the Brie: Bake for about 20-25 minutes, or until the pastry is golden brown and puffed.

Cool Slightly: Allow it to cool for 5-10 minutes before serving. This helps the cheese to set slightly and prevents it from being too runny.

Serve: Drizzle with additional honey if desired and serve alongside fresh apple slices, crusty baguette, or assorted crackers.
