1 tablespoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

¼ teaspoon nutmeg (optional)

⅔ cup granulated sugar, divided

2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

¾ cup milk (or non-dairy alternative)

2 large eggs

1 teaspoon vanilla extract

3 tablespoons unsalted butter, melted

1 cup confectioners’ sugar (for glaze)

2 tablespoons milk (for glaze)

½ teaspoon vanilla extract (for glaze)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, salt, cinnamon, nutmeg (if using), and ½ cup of the granulated sugar. Whisk until well combined.

      Prepare the Apples: In a separate bowl, toss the diced apples with the remaining ⅙ cup granulated sugar until coated. Set aside.

        Combine Wet Ingredients: In another bowl, whisk together the milk, eggs, 1 teaspoon vanilla extract, and melted butter until smooth.

          Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix; it’s okay if there are a few lumps. Gently fold in the sugared apples until evenly distributed in the batter.
