The foundation of your baked apple cider donuts lies in the reduction of apple cider. To achieve this, start by pouring about two cups of apple cider into a saucepan. Heat the cider over medium-high heat and bring it to a boil. Once boiling, reduce the heat to medium-low and let it simmer. The goal is to reduce the cider to about one cup, which will concentrate its flavors and sweetness.

Ingredients

2 cups apple cider

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon vanilla extract

3/4 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsweetened applesauce

2 large eggs

1/2 cup melted butter (cooled)

Cooking spray or oil for greasing the donut pan

Extra cinnamon sugar (1/4 cup granulated sugar mixed with 1 tablespoon cinnamon) for coating

Instructions

Reduce the Apple Cider: In a medium saucepan, bring the apple cider to a boil over medium heat. Simmer until reduced to 1 cup (about 20-25 minutes). Allow it to cool slightly.

Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or oil.

Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

Combine Wet Ingredients: In another mixing bowl, combine the reduced apple cider, vanilla extract, granulated sugar, brown sugar, applesauce, eggs, and melted butter. Whisk until smooth and well incorporated.

Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients. Stir gently until just combined, being careful not to overmix. The batter should be thick but not dry.

Fill the Donut Pan: Using a piping bag or a spoon, fill each cavity of the donut pan about 2/3 full with the batter.

Bake the Donuts: Place the donut pan in the preheated oven and bake for 12-15 minutes, or until the donuts spring back when touched lightly and a toothpick comes out clean.

Cool and Coat: Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack. While still warm, coat each donut generously in the cinnamon sugar mixture, ensuring they're well-covered.

Serve and Enjoy: These baked apple cider donuts are best enjoyed warm with a cup of coffee or cider. Store any leftovers in an airtight container for up to 2 days.
