6 plain or everything bagels, cut into 1-inch pieces

1 cup cooked bacon or sausage, crumbled

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

8 large eggs

2 cups milk (or a non-dairy alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded cheese (cheddar or mozzarella works great)

Fresh herbs for garnish (optional: chives or parsley)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or butter.

    Prepare Bagels: Place the cut bagel pieces evenly in the greased baking dish. This will serve as the base of your casserole.

      Mix Add-Ins: In a large bowl, combine the crumbled bacon or sausage, chopped spinach, and halved cherry tomatoes. Spread this mixture evenly over the bagel pieces in the baking dish.

        Whisk Eggs: In another bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until well combined.

          Pour Egg Mixture: Pour the egg mixture evenly over the bagels and toppings in the baking dish. Gently press down on the bagel pieces to ensure they soak up the egg mixture.

            Add Cheese: Sprinkle the shredded cheese evenly over the top of the casserole.

              Bake: Cover the dish with aluminum foil (to prevent excessive browning) and bake for 25 minutes. Then, remove the foil and bake for an additional 15–20 minutes, or until the eggs are set and the cheese is golden brown.

                Cool and Serve: Once baked, let the casserole cool for about 5–10 minutes. Garnish with fresh herbs if desired, then cut into squares and serve warm.
