12 oz (340g) pasta (fusilli or penne works best)

2 ripe avocados

1 cup fresh basil leaves

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup pine nuts (or walnuts)

2 cloves garlic, minced

1/2 lemon, juiced

1/4 cup extra virgin olive oil

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup black olives, sliced

Fresh arugula or spinach for serving (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to the package directions until al dente. Drain and rinse under cold water to cool it down. Set aside.

    Make the Avocado Pesto: In a food processor, combine the ripe avocados, basil leaves, Parmesan cheese (or nutritional yeast), pine nuts, minced garlic, lemon juice, and a pinch of salt and pepper. Blend until smooth. Slowly add the extra virgin olive oil while the processor is running, until the pesto reaches your desired consistency.

      Combine the Ingredients: In a large mixing bowl, combine the cooled pasta, avocado pesto, halved cherry tomatoes, and sliced black olives. Toss gently until everything is well coated with the pesto.

        Taste and Adjust: Taste the pasta salad and add more salt, pepper, or lemon juice if needed to suit your preference.

          Serve: If desired, serve on a bed of fresh arugula or spinach for added greens. Enjoy it chilled or at room temperature!
