Avocado, Mozzarella, and Tomato Grilled Cheese

Ingredients
  

2 slices of sourdough bread

1 ripe avocado, mashed

1 cup fresh mozzarella cheese, sliced

1 medium tomato, sliced

1 tablespoon fresh basil, chopped

2 tablespoons butter, softened

Salt and pepper to taste

Optional: Balsamic glaze for drizzling

Instructions
 

Begin by preparing the bread. Spread a thin layer of softened butter on one side of each slice of sourdough.

    On the non-buttered side of one slice, spread the mashed avocado evenly and season with a pinch of salt and pepper.

      Layer the fresh mozzarella slices over the avocado, followed by the fresh tomato slices and the chopped basil. Season with additional salt and pepper if desired.

        Top with the second slice of bread, buttered side facing outward.

          Heat a non-stick skillet over medium heat. Once hot, carefully place the sandwich in the skillet.

            Cook for about 3-4 minutes on one side, or until golden brown. Flip the sandwich carefully using a spatula.

              Cook for an additional 3-4 minutes on the other side, ensuring the cheese melts and both sides are evenly browned.

                Once done, remove from the skillet and let it sit for a minute before cutting it in half. Drizzle with balsamic glaze if using.
