For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

½ teaspoon salt

For the filling:

2 ripe avocados, peeled and pitted

8 oz cream cheese, softened

½ cup Greek yogurt

½ cup honey or agave syrup (adjust to taste)

Zest and juice of 2 limes

1 teaspoon vanilla extract

2 tablespoons cornstarch

1 teaspoon baking powder

For the topping (optional):

Whipped cream

Lime slices

Fresh mint leaves

Prepare the crust:

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and salt. Mix until the crumbs are well coated. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 8 minutes, then remove from oven and let cool.

      Make the filling:

        In a food processor, combine the ripe avocados, softened cream cheese, Greek yogurt, honey (or agave), lime zest, lime juice, vanilla extract, cornstarch, and baking powder. Blend until smooth and creamy, scraping down the sides as needed to ensure all ingredients are well combined.

          Combine and pour:

            Pour the avocado filling over the cooled crust in the springform pan. Smooth the top with a spatula and gently tap the pan on the counter to remove any air bubbles.

              Bake the cheesecake:

                Bake in the preheated oven for 45-50 minutes, or until the edges are set but the center still has a slight jiggle. Keep an eye on it to avoid over-baking.

                  Cool and chill:

                    After baking, turn off the oven and crack the door open, allowing the cheesecake to cool inside for 1 hour. Then remove from the oven and refrigerate for at least 4 hours, preferably overnight to set properly.

                      Serve and garnish:
