Ingredients
  

1 lb fresh spinach, cleaned and trimmed

2 tablespoons sesame oil

1 tablespoon soy sauce (or tamari for gluten-free)

2 teaspoons minced garlic

1 teaspoon sugar

1 tablespoon sesame seeds, toasted

Salt, to taste

1 green onion, finely chopped (optional)

Instructions
 

Blanch the Spinach: Bring a large pot of water to a boil. Add a pinch of salt, then toss in the spinach. Blanch for about 1-2 minutes until vibrant green and tender. Immediately transfer to an ice bath to stop the cooking process. Drain well and squeeze out excess water.

    Prepare the Dressing: In a bowl, mix together the sesame oil, soy sauce, minced garlic, sugar, and a pinch of salt. Whisk until the sugar is dissolved and all ingredients are well combined.

      Combine Ingredients: In a large mixing bowl, place the drained spinach. Pour the dressing over the spinach and gently toss until the spinach is evenly coated.

        Finish with Toppings: Add the toasted sesame seeds and, if using, the chopped green onion. Toss lightly to combine again.

          Serve: Transfer the spinach namul to a serving dish. It’s delicious served warm or at room temperature. Enjoy as a side dish with rice and your favorite Korean protein!
