Asparagus and Lemon Pasta

8 oz (225 g) spaghetti or linguine

1 lb (450 g) fresh asparagus, trimmed and cut into 2-inch pieces

4 tablespoons extra virgin olive oil

3 cloves garlic, minced

Zest and juice of 1 large lemon

1/2 teaspoon red pepper flakes (adjust to your heat preference)

Salt and freshly ground black pepper, to taste

1/2 cup grated Parmesan cheese (plus extra for serving)

1/4 cup fresh basil leaves, chopped (or parsley, if you prefer)

1/4 cup pine nuts (optional, for added crunch)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Blanch the Asparagus: In the same pot, add the asparagus pieces to the boiling water and cook for 2-3 minutes until they are bright green and tender-crisp. Using a slotted spoon, transfer the asparagus to a bowl of ice water to halt cooking, then drain and set aside.

      Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant – be careful not to burn the garlic.

        Combine Ingredients: Add the blanched asparagus to the skillet, tossing to coat in the garlic oil. Cook for an additional 2 minutes to warm through.

          Mix Pasta: Add the drained pasta to the skillet with asparagus. Pour in the lemon zest and juice, tossing everything together. If the pasta seems too dry, gradually add reserved pasta water until you reach your desired consistency.

            Season and Serve: Stir in the grated Parmesan cheese and fresh basil. Season with salt and pepper to taste. If desired, toss in the pine nuts for added texture.

              Garnish: Serve immediately, topped with additional Parmesan and a sprinkle of fresh basil or parsley for garnish.
