½ cup unsalted butter, melted and cooled

1 large egg

1 teaspoon vanilla extract

1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice)

2 medium apples, peeled and diced (preferably Granny Smith or Honeycrisp)

½ cup walnuts or pecans, chopped (optional)

2 tablespoons brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the melted butter, egg, vanilla extract, and buttermilk until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.
