For the Pancakes:

1 cup all-purpose flour

1 tablespoon granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon salt

1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter

1 medium apple, peeled and finely chopped (preferably a sweet variety like Honeycrisp or Fuji)

For the Cinnamon Sugar Topping:

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

For Serving:

Maple syrup

Sliced apples (optional)

Whipped cream (optional)

Instructions
 

Prepare the Ingredients:

    In a small bowl, combine 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon to create the cinnamon sugar topping. Set aside.

      Mix Dry Ingredients:

        In a large mixing bowl, whisk together the flour, 1 tablespoon of sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

          Combine Wet Ingredients:

            In a separate bowl, whisk together the buttermilk (or milk with vinegar), egg, and melted butter until smooth.

              Combine Mixtures:

                Pour the wet ingredients into the dry ingredients. Stir gently to combine, being careful not to overmix; a few lumps are okay. Gently fold in the finely chopped apple.

                  Heat the Pan:

                    Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

                      Cook the Pancakes:
