Apple Cinnamon Breakfast Quesadillas

2 large flour tortillas

2 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced

1 teaspoon cinnamon

2 tablespoons brown sugar (adjust for sweetness preference)

1 tablespoon butter

1 cup shredded mozzarella cheese (or cheddar for a sharper flavor)

1/4 cup chopped walnuts (optional)

1 tablespoon maple syrup (for drizzling)

Powdered sugar (for dusting, optional)

Whipped cream (for serving, optional)

Instructions
 

In a skillet over medium heat, melt the butter. Once melted, add the sliced apples, cinnamon, and brown sugar. Stir to coat the apples evenly.

    Cook the apple mixture for about 5-7 minutes, stirring occasionally, until the apples are tender and caramelized. Remove from heat and set aside.

      In the same skillet, lower the heat to medium-low. Place one tortilla in the skillet and sprinkle half of the mozzarella cheese on one half of the tortilla.

        Spoon half of the caramelized apple mixture evenly over the cheese. If you’re using walnuts, sprinkle them on top as well.

          Fold the tortilla in half to create a half-moon shape. Cook for 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat this process with the second tortilla and the remaining ingredients.

            Once cooked, remove from the skillet and let cool for a minute before cutting each quesadilla into wedges.

              Drizzle with maple syrup, dust with powdered sugar (if desired), and serve warm with whipped cream on the side.
