Apple Cider Glazed Pork Chops

4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup apple cider (pure, unsweetened)

2 tablespoons brown sugar

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

2 sprigs fresh thyme (or 1 teaspoon dried thyme)

1/2 teaspoon ground cinnamon

1 tablespoon butter

Prepare the Pork Chops: Start by patting the pork chops dry with paper towels. This will help achieve a nice sear. Season both sides generously with salt and pepper.

    Sear the Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, until they are golden brown and reach an internal temperature of 145°F. Depending on the thickness, you may need to adjust the cooking time. Once cooked, remove the chops from the skillet and set aside on a plate.

      Make the Glaze: In the same skillet, reduce the heat to medium and add the apple cider, scraping the bottom of the pan to release any browned bits. Stir in the brown sugar, Dijon mustard, apple cider vinegar, fresh thyme, and ground cinnamon. Bring the mixture to a low simmer and let it cook for about 5-7 minutes, or until it reduces and thickens slightly.

        Combine Chops with Glaze: Return the pork chops to the skillet and coat them evenly with the glaze. Cook for an additional 3-4 minutes, flipping halfway through to allow them to soak up the flavor.

          Finish with Butter: Sprinkle the tablespoon of butter into the skillet and stir it into the glaze until melted. This will create a richer consistency for the sauce.

            Serve: Remove the skillet from the heat and let the pork chops rest for a couple of minutes. Serve the pork chops drizzled with the apple cider glaze, and garnish with extra thyme if desired.
