2 cups unsweetened applesauce

2 cups all-purpose flour

1 cup granulated sugar

1 cup brown sugar, packed

1 cup vegetable oil

4 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup chopped walnuts or pecans (optional)

1 cup raisins (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

      Combine Wet Ingredients: In a large mixing bowl, beat together the granulated sugar, brown sugar, and oil until well combined. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and unsweetened applesauce until everything is mixed thoroughly.

        Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing to keep the cake light and fluffy.

          Add Nuts and Raisins (Optional): If desired, fold in the chopped walnuts or pecans and raisins to the batter.

            Pour and Bake: Pour the batter into the prepared baking pan, spreading it out evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

              Cool and Serve: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10-15 minutes. Then transfer it to a wire rack to cool completely. Cut into squares and serve as is, or dust with powdered sugar for an extra touch!
