Air Fryer Zucchini Chips

2 medium zucchinis

1 cup breadcrumbs (panko or regular)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt

2 large eggs

Olive oil spray (for light coating)

Optional: fresh herbs (like thyme or oregano) for extra flavor

Instructions
 

Prep the Zucchini: Wash the zucchinis and slice them into thin rounds, about 1/8 inch thick. You may want to use a mandoline slicer for uniform slices if you have one.

    Make the Breading Mixture: In a mixing bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and salt. Mix well until all ingredients are evenly distributed.

      Set Up the Breading Station: In another bowl, beat the eggs until well mixed.

        Bread the Zucchini Chips: Dip each zucchini slice into the beaten eggs, allowing excess to drip off. Then, coat the slice with the breadcrumb mixture, pressing lightly to ensure the coating sticks. Set the breaded slices aside on a plate or baking sheet.

          Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes while you finish breading the zucchini.

            Arrange and Spray: Lightly spray the air fryer basket with olive oil to prevent sticking. Arrange the breaded zucchini chips in a single layer (you may need to work in batches). Spray the tops with a light coating of olive oil for added crispiness.

              Air Fry: Cook the zucchini chips in the air fryer at 400°F (200°C) for 10-12 minutes, flipping them halfway through. Check them regularly to ensure they don’t overcook — you want them golden brown and crispy.

                Cool and Serve: Once they are done, remove the chips from the air fryer and let them cool slightly on a wire rack. Serve warm as a snack or a side dish. Enjoy with a dipping sauce like ranch, garlic aioli, or marinara!
