2 large boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

2 large eggs

1 tbsp Dijon mustard

Cooking spray or olive oil spray

Fresh parsley (for garnish, optional)

Prep Chicken: Begin by patting the chicken breasts dry with paper towels. This helps the coating stick better. If the chicken breasts are thick, consider slicing them in half horizontally to create thinner cutlets for more even cooking.

    Prepare Coating Mixture: In a shallow bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, black pepper, and salt. This will create the crispy crust for the chicken.

      Egg Wash: In another bowl, whisk together the eggs and Dijon mustard until well combined. This mixture will help the coating adhere to the chicken.
