2 boneless, skinless chicken breasts (about 1 lb)

1 cup broccoli florets

1 cup bell peppers (mixed colors, sliced)

1 cup zucchini (sliced)

2 tablespoons olive oil

1 tablespoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prep the Chicken: Begin by trimming any excess fat from the chicken breasts. Cut them into bite-sized pieces for even cooking and quick frying.

    Marinate the Chicken: In a mixing bowl, combine the chicken pieces with 1 tablespoon of olive oil, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper. Mix well and let it marinate for at least 15 minutes.

      Prepare the Vegetables: In another bowl, toss the broccoli, bell peppers, and zucchini with the remaining 1 tablespoon of olive oil and a pinch of salt and pepper, ensuring they are evenly coated.

        Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and preheat for about 5 minutes.

          Cook the Chicken: Once preheated, place the marinated chicken pieces into the air fryer basket in a single layer. Cook for 8-10 minutes, shaking the basket halfway through to ensure even cooking.
