2 large roasted red bell peppers (jarred or homemade)

1 cup heavy cream

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Prep the Peppers: If using jarred roasted red peppers, drain and rinse them. If you have fresh peppers, roast them on an open flame or under the broiler until the skin is charred. Place them in a covered bowl to steam for about 10 minutes; this will make peeling easier. Remove the skins, seeds, and stems, then chop the peppers roughly.

    Sauté Garlic: In a medium-sized saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it brown.

      Blend the Sauce: Add the chopped roasted red peppers to the pan and stir to combine. Pour in the heavy cream, and then season with salt and pepper. Let the mixture simmer for 3-4 minutes.

        Purée Mixture: Using an immersion blender (or transferring to a regular blender), purée the sauce until smooth and creamy. If using a regular blender, allow the mixture to cool slightly before blending.

          Adjust Seasoning: Taste the sauce and adjust the salt and pepper as needed. If you prefer a thinner sauce, you can add a splash of water or additional cream to reach your desired consistency.
