Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Juice of 1 lemon

Salt and pepper, to taste

8 ounces linguine or spaghetti

¼ cup fresh parsley, chopped

Zest of 1 lemon

Grated Parmesan cheese, for serving

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add linguine or spaghetti and cook according to package instructions until al dente. Reserve about ½ cup pasta water, then drain the pasta and set aside.

Sauté the Shrimp: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the minced garlic and red pepper flakes (if using) and sauté for 30 seconds until fragrant, taking care not to burn the garlic.

Add the Shrimp: Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes on one side until they turn pink, then flip and cook for an additional 1-2 minutes until fully cooked.

Create the Sauce: Squeeze in the lemon juice and add the remaining tablespoon of butter. Stir well to combine, allowing the butter to melt and create a glossy sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.

Combine: Add the cooked pasta to the skillet with the shrimp and gently toss everything together to coat the pasta with the sauce. Add in the chopped parsley and lemon zest for freshness.

Serve: Plate the shrimp scampi and finish with a generous sprinkle of grated Parmesan cheese and additional parsley, if desired. Enjoy immediately!
